June 17 is rather randomly National Apple Strudel Day. The oldest known Apfelstrudel recipe comes from Austria and was hand written in 1696! I tried a few Apfelstrudels in Austria, and they were almost always served with lashings of whipped cream 🙂
This recipe is a quick and easy one for this delicious dessert.
Apfelstrudel (Apple Strudel)
2 Tbsp caster sugar
1 Tbsp flour
1/4 tsp ground cinnamon
2 Granny Smith Apples, peeled, cored and thinly sliced
4 Tbsp raisins
1 sheet of ready rolled flaky pastry, thawed
1 egg beaten with 1 Tbsp water
1. Mix sugar, flour, cinnamon in a bowl. Add apples and raisins and stir until apples are coated.
2. Line a baking sheet with baking paper and unroll pastry onto it. Add the apple mixture in a strip up the middle of the pastry, then bring together edges to form a log shape. Tuck the ends in underneath and turn over. Brush the pastry with the egg, and cut 2cm slits at equal intervals.
