Well as the title says, this week is all about cake (to be fair most weeks are, but this one in particular!)
‘Cake week’ started last Saturday when Cake Fix and I attended the most gorgeous Ruffle Cake class, run by Rachael from Made From Scratch. Rachael showed us how to make a Vanilla layer cake, Vanilla buttercream, Swiss meringue buttercream, and then we got hands on and assembled our layer cakes and iced them ruffle style.
The class was so much fun, I picked up loads of baking tips, and it was great to try a style of cake decorating that I have wanted to do for ages. Rachael runs a variety of different baking classes, so if you are in Auckland, I highly recommend you check it out!

Tomorrow Cake Fix and I are decorating cupcakes and a two-tiered chocolate ganache mud cake for a good friend’s wedding on Saturday. And I’ve also got another cake surprise that I will write more about soon, so as not to spoil a surprise…
Phew! After all that cake, I’m hoping next week to get back into the ‘Around the World in 80 Plates’ challenge with dish number 26 🙂
